FRESH THYME
Fresh Thyme leaves may be small, but they pack a powerful punch.
It retains its flavor well in long slow cooking. In Britain, thyme is the most popular culinary herb besides mint. It is one of the savory herbs, which are main course herbs used to flavor hardy meals, bone-warming soups, and piquant sauces.
They blend their essence with other savory herbs like Tarragon and Savory to create some memorable flavors.

FRESH TARRAGON
The flavor of Fresh Tarragon produces lots of leaves, which can be used for a milder flavor.
This herb has a spicy characteristic with anise-like qualities; the leaves are used raw or cooked in fish, chicken and potato dishes. Seed is used raw or cooked. In French cooking, it is usually paired with chives and becomes a fine herbs mix.
This highly prized herb is blended into Hollandaise, Tartar and Béarnaise Sauce. Because fresh tarragon leaves are vastly superior to dried, it was little used in home kitchens until fairly recently. Now it's an essential and indispensable herb. A few leaves shredded into scrambled egg raise this simple dish to a new level. Fresh Tarragon makes one of the most versatile of herb vinegar and is often used in mustards and butter. It adds a fresh, herbal fragrance to mushrooms, artichokes, and ragouts of summer vegetables, with tomatoes it is almost as good as basil.

FRESH ROSEMARY
Rosemarinus officianalis
Can be used for ornamental, culinary and medicinal purposes. The aromatic, evergreen shrub, native to the dry hills of southern Europe and North Africa.
Finely chopped they can be used to flavor a variety of dishes, especially stuffing. Many cooks simply cut sprigs of rosemary and place with roasted meats, especially lamb, pork, chicken and turkey with great results.

FRESH MINT
(SPEARMINT, MENTHA SPICATA)
Fresh Mint is one of the most widely used and most famous of all herbs. It is easy to cultivate and has a wide variety of culinary and medicinal uses.
The flavor of mint goes well with many savory ingredients, especially vegetables. We eat spearmint with lamb, usually made into mint sauce, as it helps digest the fatty nature of the meat.
Its digestive qualities are similar to peppermint but not as strong. On the sweet side, the taste goes particularly well with chocolate.
Use mint combined with rum, carbonated water, lime, and sugar to make the popular alcoholic beverage Mojito.

FRESH CHIVES
(Allium schoenoprasum)
Are the Fresh chives most used for culinary purposes and the chives that have beautiful pink flowers, ‘Fine-leaved’ chives have a delicious, mild onion flavor.
The narrow linear leaves are snipped and used primarily fresh, stirred into uncooked foods, such as soft cheeses or salads or added to cooked foods during the last few minutes of cooking, or as a garnish.

FRESH BAY LEAVES
Fresh Bay leaves were used for flavoring by the ancient Greeks
They are used in soups, stews, meat, seafood, vegetable dishes, and sauces. The leaves also flavor many classic French dishes.
The leaves are most often used whole (sometimes in a bouquet garni) and removed before serving they can be abrasive in the digestive tract. Thai cuisine employs bay leaf in a few Arab-influenced dishes, notably massaman curry.

FRESH BASIL Sweet Basil (Ocimum basilicum)
It is a delicate herb with a bold aroma and flavor, containing about 1% essential oil which has an intense, spicy-sweet, aroma and a slight anise-like undertone.
Basil is one of the key ingredients of Mediterranean cuisine, mainly in Italy, Greece and the French Provence. Its most common use is to prepare pesto, an Italian sauce.
Overall it is an ingredient that blends well with pastas, salads, tomatoes, potatoes and eggplant, among others. In addition it is ideal for the preparation of aromatic oil.

A very common herb, oregano is widely used to give flavour to tomato or meat dishes.
It is a widely used herb in Greek and Italian cuisine and is often used in tomato dishes, salads and with grilled meats. Together with basil (Ocimum basilicum), it is one of the main flavouring ingredients of Italian food.
Oregano is used in traditional medicine for treating colds, indigestion and stomach upsets.
